MCM College: Taste of MCMC – Cook with the Chef
滿珍紀念書院:尋味滿珍—相約大廚
Moon Chun Memorial College, University of Macau, was delighted to invite Mrs Florita Alves, the renowned Macanese chef from Restaurant La Famiglia, to host the “Taste of MCMC” event—Cook with the Chef. This event featured a unique selection of Portuguese dishes, including stuffed eggs, turmeric chicken, crab and pumpkin soup, and coconut milk pudding. Under Chef Florita’s guidance, students not only learned authentic Portuguese cooking techniques but also explored the cultural heritage behind each dish.
The workshop began with Chef Florita demonstrating the essential steps for preparing stuffed eggs. During the hands-on session, students worked in teams, honing skills such as slicing ginger into fine strips, chopping onions, marinating chicken, and pan-frying it, before finally enjoying their culinary creations. Each phase of the process—from ingredient preparation to cooking and plating—showcased the group’s teamwork and dedication.
Throughout the event, students enhanced their culinary skills and deepened their understanding of Portuguese food culture. Many participants noted how cuisine serves as a cultural bridge, fostering appreciation for diverse traditions. The event concluded joyfully, filled with laughter and the delightful aromas of the dishes, with attendees expressing excitement for future cross-cultural culinary exchanges.

澳門大學滿珍紀念書院很榮幸邀請到澳門著名土生葡菜大厨兼葡國餐廳La Famiglia主廚Florita Alves,舉辦第二次「尋味滿珍—相約大廚」。這次活動的特色菜色是葡式釀蛋、薑黃雞、蟹肉南瓜湯和椰奶布丁。在Florita主廚的指導下,學生們不僅學習了道地的葡式烹飪技巧,更深入了解了每道菜背後的中西文化交融的底蘊。
工作坊由廚師現場示範釀蛋的製作步驟和烹飪技巧。在動手環節,學生們分組合作,練習切割薑絲、切洋蔥、醃雞肉、煎雞肉,以及最後品嚐他們的作品。從準備食材到烹飪裝盤,每個步驟都體現了團隊的共同努力和用心。在整個過程中,學生不僅提升了烹飪技巧,也加深了對土生土長飲食文化的理解。
參與製作的董楊同學表示,這次活動讓他加深了對於葡國文化的理解:「比如說,薑黃雞這道菜,既用了葡國的香料也用了中國傳統的材料蔥、姜,就像澳門這個地方的文化一樣,中西合璧;我們也嘗試了南瓜蟹肉湯、布丁、炸雞蛋等等美食。」其他參與者亦指出,美食扮演了文化橋樑的角色,促進了人們對多元文化的欣賞。活動在歡笑和菜餚的香氣中圓滿結束,與會者對未來跨文化烹飪交流充滿期待。
