Celebrating the 45th Anniversary of the University of Macau: CKYC and Oxfam in Macau co-organized the workshop “From Leftovers to Jam: Transforming Kitchen Waste into Eco-Enzymes”

慶祝澳門大學45周年校慶: 蔡繼有書院與澳門樂施會聯合主辦 “剩食變果醬・廚餘變酵素” 環保工作坊

2026 年 3 月 4 日,由澳門大學蔡繼有書院與澳門樂施會聯合主辦的 “剩食變果醬・廚餘變酵素” 環保工作坊在書院順利舉辦。是次活動共有二十人參加,旨在通過實踐操作,向參與者傳遞 “減少食物浪費、迴圈利用資源” 的環保理念,將廚房剩餘食材轉化為可食用果醬與環保酵素。

活動開始後,主講人先介紹了全球食物浪費現狀及廚餘回收的重要性,隨後分步演示果醬熬制與酵素製作流程:從食材挑選、清洗、切塊,到按比例混合糖與果皮、密封發酵等關鍵步驟,清晰易懂。參與者分組實操,在指導下完成果醬熬制與酵素瓶裝配制,過程中交流日常減塑、剩食處理的生活技巧。

本次工作坊不僅讓參與者掌握了實用的剩食利用技能,更強化了可持續生活意識,推動校園環保氛圍營造。未來書院將繼續聯合公益組織,開展更多貼近生活的環保實踐活動,助力構建綠色社區。

On March 4th, 2026, the workshop “From Leftovers to Jam: Transforming Kitchen Waste into Eco-Enzymes” co-hosted by Choi Kai Yau College of the University of Macau and Oxfam in Macau was successfully held in the College. A total of 20 students participated in the activity, which aimed to promote the environmental concept of “reducing food waste and recycling resources” by guiding participants to turn kitchen leftovers into edible jam and eco-enzymes through hands-on practice.

At the beginning of the workshop, the presenter first elaborated on the global issue of food waste and the significance of kitchen waste recycling. Then, step-by-step demonstrations of jam cooking and eco-enzyme preparation were provided, covering key procedures such as ingredient selection, washing, dicing, proportional mixing of sugar and peels, and sealed fermentation. Participants worked in groups to complete the jam boiling and enzyme bottling under professional guidance, while exchanging daily tips on plastic reduction and leftover handling.

This workshop not only equipped participants with practical leftover utilization skills but also strengthened their awareness of sustainable living, fostering a greener campus atmosphere. In the future, the College will continue to collaborate with public welfare organizations to launch more life-oriented environmental practice activities, contributing to the construction of a sustainable community.
